I love lentils: delicious, versatile, nutritious and economical. Green, brown, red, yellow, black beluga, french – rarely a week goes by that I don’t make a big pot of lentil soup, or, in the summer, a lentil salad.

Did you know that lentils are great sources of iron, folate and many other vitamins, protein, and soluble and insoluble fibers? But, mostly I like them because they taste great and I can do so many different things with them.
